Petty / Universal knives
Not everything can be done comfortably with a chef's knife. Usually its size, 21-24 cm, is good for dividing products into larger pieces, but it will not work for smaller, more precise tasks. In a well-planned set of kitchen knives, a gyuto support cannot be missing - usually this role is taken by a small petty, universal knife. Usually they do not exceed 15 cm of the blade, for many people 13.5 cm is optimal. The narrow blade allows easy maneuvering and precise cuts, for example when processing fruit or vegetables. Peeling and dividing an orange, cutting the pericarp from an apple or trimming strawberry stalks are tasks in which the petty will be an excellent tool.
There are three main shapes of the blade; curved like a claw, with a concave cutting edge, which works very well in peeling, straight edge, at an angle to the handle, portioning very well due to the fact that the edge is in full contact with the cutting board with the tip floating in an arc, very versatile, smaller version of the gyuto. Due to the popularity of this shape, the market is saturated with models in a wide variety of steels, manufacturers, blacksmiths and prices, and it will not be an exaggeration to say that everyone can find a petty for themselves.
