Funayuki 17 cm Kyohei Aogami#2/Iron

A traditional Funayuki with a relatively light and agile profile, originally developed for fish preparation but versatile enough for a wide range of kitchen tasks. The shape works especially well for portioning smaller fish, trimming, and precise slicing where a heavier Deba would feel excessive. Its Aogami #2 carbon steel core with iron cladding offers a distinctly traditional cutting feel and requires regular drying after use.
