KNIFE CARE

The basic principle of maintaining stainless steel knives is to wipe them dry. Leaving a wet knife to dry on its own will result in the appearance of small spots of rust. It is completely unacceptable to wash the knives in a dishwasher, chemicals and high temperature will negatively affect the handle and the blade, it can also lead to permanent damage to the knife. The knife is used only for cutting soft, boned and non-frozen products. If the blade comes into contact with the bone, it can chip. When cutting, do not twist the knife from side to side, as it may break the tip if the knife is jammed in the product. The wood and plastic boards recommended by us, cutting on glass or stone boards is prohibited, it will lead to an accelerated process of blunting the knife and possible nicks. The knife should only be used as a cutting tool, the thin, sharp design perfectly cuts the products, but when you try to open the jars, the blade may chip.

Solid, good quality Japanese stainless steel produced by Aichi Steel. After appropriate treatment, it reaches a hardness of up to 60 HRC. This steel is highly valued for its precisely refined chemical composition. Thanks to the chrome content, it is stainless, sharp, with improved sharpness. Molybdenum and vanadium effectively improve their strength properties, such as hardness, strength and abrasion resistance. Both elements improve hardenability. Thanks to the addition of silicon, popular in stainless steels, this steel has increased resistance to stress. In addition to the typical knives, this alloy is also popular with machete manufacturers who focus on reliability. AUS 8 is compared to American 440 steels and, like these steels, is reliable. Among users, this steel is valued for its reliability, high hardness, strength, corrosion and wear resistance, combined with good sharpness. This steel is used on a mass scale, thanks to which knives made of it will be cheap, but at the same time solid. Do not associate "mass use" with "mass production" and worse quality, because the quality of AUS 8 steel will not allow it to be negatively labeled.
